Crean en la UNAM tortilla que combate la desnutrición, la diabetes y la obesidad - Duration: 4:53.

 CIUDAD DE MÉXICO (apro).- Estudiantes de Ingeniería en Alimentos, liderados por la profesora Raquel Gómez Priego, en la Facultad de Estudios Superiores (FES) Cuautitlán de la UNAM, elaboraron unas tortillas cuyo consumo no hace engordar y, por el contrario, ayuda a combatir la desnutrición, la obesidad y la diabetes

 En un comunicado, la máxima casa de estudios del país explicó que dos de estas tortillas equivalen a los nutrientes de un vaso de leche y contribuyen a combatir la obesidad y la consecuente diabetes mellitus tipo 2

 La razón: no contienen "calorías vacías", sino proteínas, calcio, fibra, ácido fólico y una mezcla de microorganismos benéficos

 Según la investigadora Gómez Priego, el aporte calórico de una tortilla universitaria de 25 gramos es de 68 a 70 kilocalorías, mientras que las que se ofrecen en el mercado, de harina de trigo y del mismo peso, es de entre 80 y 100 kilocalorías

 Pero la diferencia más importante, aclaró, es que "la tortilla convencional tiene calorías vacías (muchos carbohidratos), y dos piezas de las nuestras equivalen a los nutrientes de un vaso de leche, algo muy útil para comunidades con desnutrición"

 Además de su alto contenido nutrimental, las tortillas universitarias tienen un efecto benéfico para la salud, pues están adicionadas con probióticos y prebióticos, una mezcla simbiótica de microorganismos

 La especialista explicó: "Probiótico se refiere al uso de microorganismos vivos que pasan por el tracto gastrointestinal sin que el pH les cause la muerte, y cuando llegan al intestino delgado se implantan y ejercen un efecto benéfico porque inhiben el crecimiento de flora intestinal indeseable

Y los prebióticos son fibras naturales que también ayudan".  Y destacó: "Es una tortilla única, no existe otra en el mercado que lleve un proceso de fermentación como éste

Además, tiene alto contenido proteico, ácido fólico, calcio, vitaminas y minerales"

 Su elemento principal, detalló, es que "al elaborar la masa hay un proceso de fermentación que le da características únicas en cuanto a sabor, aroma y textura

Durante la fermentación se producen ácidos orgánicos y compuestos llamados bacteriocinas, que tienen una actividad antimicrobiana y contribuyen a su conservación de forma natural, así que no necesita conservadores"

 Para elaborarlas, se usa una doble fermentación -combinación de dos tipos de microorganismos-, por lo que las tortillas pueden durar hasta un mes sin refrigerar

Ello las haría útiles en zonas marginadas y en los desayunos escolares.  Las tortillas fueron probadas en sabor, textura y aceptación por 50 estudiantes, profesores y trabajadores de entre 18 y 50 años de la FES Cuautitlán

El resultado: "Gustó mucho".  Los creadores destacaron que se pueden hacer de harina de trigo o de maíz y su masa es útil para combinarse con alimentos salados o dulces, así como para elaborar crepas o base para pizza

 "Por el momento no se venden, ya que para producirlas a gran escala y llegar al mercado, se necesita una contraparte que financie el proyecto y esté dispuesta a montar la infraestructura", aclaró Raquel Gómez

 Sin embargo, concluida la etapa experimental, las tortillas están actualmente en proceso de patente

La solicitud fue hecha hace un año y está en trámite con cesión de derechos a la UNAM, aunque sus creadores dijeron que están en "la mejor disposición de hacer una transferencia tecnológica a la industria para que lleguen al mercado"
