I torched potatoes and used them to thicken my sauce, a vegetable stock made with mirepoix,
kombu, and dehydrated mushrooms.
I shaved daikon and sauteed dulce and wakami seaweed and whittier mushrooms and garlic,
ginger, and chili oil, sliced and blanched fingerling potatoes and cooked the soba noodles.
This dish is green tea soba noodles, with burnt potato ash, and seaweed.
