It might cost a little bit more for me to buy, but this is the way that a premium product
is handled.
The flavor is complex, it's rich, and you can taste the love and energy that has been
put into this chicken to bring it to the market the right way.
When I get the opportunity to use something as amazing as this chicken, I use every piece
of it.
This is my chicken four different ways. Cast iron whole roasted chicken with a citrus salsa verde.
Simple, clean, served over a bed of kale. A brandy liver pate and date relish served
with crunchy bread, topped with a little extra virgin olive oil and some nice crunchy sea salt.
A rosemary and spicy chicken ground meat skewer with castelvetrano and Calabrian chili relish and to top it off, I do
a gizzard heart and walnut pesto toast that changes people's lives.
