USA news on Youtube Nov 9 2017

Hey guys!

Some people love okra but they do not like it slimy,

the way we prepare it in Nigeria.

Nigerian Okra Soup needs to be slimy because it is that slime

that helps send down those balls of swallow.

If it does not draw, stretch, follow you as your hand leaves the bowl of soup,

it is not the real deal!

Another group of people say

they would like to see Okra Soup prepared without palm oil.

I will combine these two requests in this video.

You'll need okra; fresh, green, baby okra.

This is how I measured it; I have about 3 cups here.

You need crayfish.

I ground this one with a spice grinder.

If you do not have crayfish, use fresh shrimps or prawns.

Onions, I recommend red onions for this recipe.

You'll need green leafy vegetables.

We normally use ugu that's Nigerian pumpkin leaves.

But I'll be using spinach.

Dry fish.

This dry fish is mangala.

You can also use dry cat fish, smoked or boiled mackerel

or any other fish of your choice.

I'll be using yellow habanero pepper.

You can use the red one or scotch bonnet peppers.

Because we will not be using palm oil for this Okra Soup,

I'll add sweet peppers for some colour.

You can see that there's a lot of green going on,

we need some colour.

Sweet pepper is not spicy hot.

You can use also Nigerian tatashe

but remember that tatashe is spicy hot.

So if you use it, you may not need to add another

spicy pepper like this yellow pepper.

It all depends on how much pepper

you like in your meals.

You'll need beef, I have about 10 pieces of this size there.

I'll be adding shaki as well.

That's cow tripe.

Seasoning cube, beef flavour.

We start by soaking the dry fish in cool water.

Rinse and clean all the vegetables.

I removed the seeds from the sweet pepper.

Since we do not want the okra to be slimy,

we cut them into big pieces.

The thing with okra is the tinier you cut it,

the slimier the soup will be.

So this is the minimum you want to cut it if you don't want it slimy.

I don't add the stalk because it is quite fibrous.

But if you don't mind, you can add it.

Cut the leafy vegetable into big chunks.

Cut the peppers like this.

The vegetables are ready!

When the fish is soft, debone and break into pieces.

Boil the meats with half of the onions.

When the meat is done, remove from the meat stock

and continue boiling till the water reduces considerably.

There's too much water because I used a pressure cooker.

When happy, decant the stock into the pot of meat.

Add the deboned dryfish and the rest of the ingredients as shown.

If you want to add palm oil, add it now.

Cover and cook for about 3 minutes.

Meanwhile, because spinach contains lots of water,

I am going to wilt it in a pan.

If you are using ugu, this won't be necessary.

You see all that liquid?

It will make the

soup watery and it also affects the taste of the soup.

Back to the main pot,

add the okra and the leafy vegetable

Add salt if necessary.

Cover and leave to simmer ...

... and it's done.

This soup is a meal on its own because it is quite filling.

My husband calls it Okra Peppersoup!

I actually prefer eating this as a meal on its own

because I can't swallow semo with okra soup that is not slimy.

But if you can, you can use it as soup for your favourite swallow.

As we promised, we found another world cuisine in the US

And this time, Venezuelan dish

But before we order,

let's check out the kitchen right now

They do all of their catering in here

in this tiny kitchen...almost like a house

Deep fried arepas

These are tortones...tostones

These are our green fried plantains

And you have french fries also

Yes, french fries for burgers, hot dogs...

Sweet mashed potatoes.

Everything is fresh from the process...

Oh look at that!

She's making a Chicken Pepito...

Chicken Pepito? Yeah it's like... cheesesteak, but with chicken

Chicken version. OK...

This is very typical.

Right here, the Arepas.

We pre-made it, every morning, everything...

They're all fresh, and this is right now... this was full...

And already in the morning, it was was sold out, so we have to make a lot more right now

Yup, all the prepping is all done right here in this tiny kitchen!

As our appetizer to start with...

There's more dough than cheese, but it's good!

That garlic sauce made such a big difference right there,

which is so good

Perfect with the garlic sauce, it's so flavorful

If you love garlic, you gonna love this sauce...

They call it a white sauce, it's just really strong...

or maybe garlic salt is in there I suspect

very strong garlic flavor, this is...

AMAZING

This is Empanada de Pabellon

It is delicious.

It has beans, plantains, beef...shredded... and cheese

Similar to that, yes.

It's in there...really good...

What you should order, what's the typical dishes in Venezuela

They'll just explain everything to you!

She just brought us this Empanada

Ooohh... This is really nice and hot, freshly deep-fried right out of the kitchen

Let's open this beauty up

It's a bit chewy too I think

Hmm so good...

It's so fresh...

It's so good... so flavorful I love how tender the beef is

and it's seasoned perfectly

Umm this is so good, I love the dough very thin

and crispy... Now I'm gonna try the avocado sauce

it looks quite similar to the garlic sauce... more on the green side

Mmm...

The avocado sauce is almost like a creamy avocado dressing

And the dough also, a little bit sweet, a bit salty

chewy, crispy on the outside

This is perfect, guys

Some people on the internet might get confused about the name of the restaurant

Cause I know there's Hemibry and there is Arepas Capitol

Could you tell us a little bit...?

Absolutely yeah...

Actually we started as a Hemibry catering.

Hemibry is Hernan... first initials of each name

Hernan, that is me

Miriam, that is my wife,

and Bryan, my son

Oh that is awesome!

Yes, so we have five years with a catering company

We didn't plan to have this as a regular restaurant

But you know, it got very popular,

so we said, let's name something popular of our country

so we named it Arepas

Arepas, and of course the capitol because of the capitol building of DC

We're very near from it.

So if you're doing catering, you have an event,

You have a wedding, corporate event, private event

So we got the chicken here... but is it commonly eaten with chicken?

Is it like a little hamburger...?

Always, yeah... Always like that Big sandwich...

You have to eat it like that, if not people complain

Do you make this at home too?

Yes! These are fresh made, every single day...

as we mentioned inside the tour of the kitchen

Yeah they're all freshly made

The main, main, major dish in Venezuela is this Pabellon Criollo

Can you tell us a little bit about this?

Sure absolutely!

Well the black beans are very popular in Venezuela,

everybody eats black beans

I think it's more like a traditional... from like African-American... from our ancestors

and the rice is from Spain

You know, we had a lot of people from Spain coming into Venezuela

The shredded beef, very tender

We seasoned it with tomatoes and different spices

Not that it's spicy, but everything has its spices

The egg is called umm... This Pabellon is called with baranda,

the baranda is the egg

That is something additional that you add to the Pabellon

Oh okay so at home, do people always eat with egg or it's optional?

No it's just optional... yeah but I like it here with an extra color

People say, "Do you like it with baranda or without baranda?"

Oh okay! That's awesome!

A little bit of the black beans

Hmm... so flavorful!

Arepa is so interesting to me because...

It's like in between bread and a pancake!

Time for some spicy sauce!

Put a little bit on top of the shredded beef, and eat it together with the rice...

Let's see...

I think I took quite a lot, let's see how spicy this is

Mmmm... ohh!

It's basically a spicy salsa

Like a salsa sauce... ohh...

It's spicy...!

I like how the spicy sauce has a little bit of sourness to it too

This is so good... oh my gosh

I can eat this all day, everyday

I'm serious

Some cheese

I just put the fried egg on top of the rice

It's just cooked perfectly with the yolk uncooked

oh this is so good... take a little bit of that

with the rice together...

At home, I usually eat a hundred percent cooked egg

but this is so good

Perfecto!

Time to try some of the fried plantains on the side

Looks so juicy too

Mmmm...

It's so sweet

I've never thought that we could eat like a main meal

like an entree, a salty entree together with something sweet,

but it pretty... it goes pretty well actually

Another common Venezuelan drink is the

passion fruit juice

So whether it's a soda, whether it's a juice,

Venezuelan people just drink anything they'd like to drink...

Usually a juice, usually a soda, at home or outside

and just eat together with their meal

Ohh...

this is so sweet!

It's so good. I can see that it's

freshly squeezed juice because I can see the little... pulp inside

so this freshly squeezed juice, not store-bought

We also got the Arepas with a stuffed chicken

Shredded chicken inside...

Arepa is also a very commonly Venezuelan dish

It's corn flour dough on the outside

and you can stuffed it with any kind of meat

and we got the chicken right here

and it's gigantic...

look at this...

This aprea is really meaty

I love how it has a lot of tomatoes inside

and with the cilantro, very very flavorful

and this is different from like a sandwich or a burger because

it's very juicy

Oh this is so good. Really flavorful.

We also got the Cachapa, which is sweet corn pancakes stuffed with cheese

Cut it out and see...

Oooh look at that cheese, it's so thick

Almost look like... like a mozzarella to me

The texture... it's real pieces of corn out there...

Hmm... it's chewy, it's sweet, the cheese tastes

like mozzarella... Oh this is so good

Oh this is really good! It's like a cheese corn pancake

To me it's almost like a breakfast food...

I don't know, sweet like saltiness from

the Venezuelan cheese... It's amazing!

Wow!

This is called Fress Kolita,

and it's one of the most popular Venezuelan sodas here

Sort of like a Coke, like a Pepsi here in America

Tastes just like bubble gum, a little bit like cherry to me at first

but it's amazing, like a Fanta,

I think kids would love this.

We had a very yummy Venezuelan experience here
